This honey comb recipe is truly delicious, at the restaurant we use local honey from Aberystwyth but you can use any good quality honey you can get your hands on. The secret to any honey comb recipe is to have everything ready before you start cooking. Once you add the bi-carb you have seconds to whisk and pour it into your tray. Please also be very careful making this, Caramel is extremely hot and the steam from whisking can cause serious burns.
Honey Comb
- 200g of caster sugar
- 60g of golden syrup
- 200ml of glucose syrup
- 20g of bicarbonate of soda
Line a deep 30cm x 20cm baking tray with parchment paper
Add the sugar, golden syrup and glucose to a large, flat pan. Place the pan over a medium heat and heat gently to a light golden-brown caramel. The temperature should reach 165°C on a sugar thermometer;
Sprinkle the bicarbonate of soda over the caramel and stir through. Be very careful at this point as the caramel will be bubbling and hot
Pour the honeycomb onto the lined tray and place in the fridge. Leave to cool for approximately 20 minutes, or until it has set firm
Sprinkle over your favorite ice cream, dip in chocolate or use it as garnish to your favorite desserts.
